Salmon, Asparagus, Butternut Squash, and Salad

Dinner last night was so yummy and fairly simple. We grilled salmon on our George Foreman grill and it literally took about 4 minutes. The fillets were 6 oz each before cooking. We sprayed them with a little olive oil, added salt and dill seasoning.  

I broiled the asparagus in the oven for about 10 minutes with olive oil, garlic, and salt.

We had the roasted butternut squash left over from the other night and I added a little salt and Thyme.   I have been making these really amazing salads lately and this one was no exception! I did a lettuce combo of arugula and spinach. A few cherry tomatoes, sliced. Tossed in some goat cheese, roasted pumpkin seeds, raisins, garlic powder, onion powder, 1/2 lemon, 1 tbsp of avocado oil, and 1/2 tbsp of flavored vinegar.

I didn’t finish my salmon and the total calories estimated by My Fitness Pal without the wine was 305! I love fish night and especially the low calories!

Currently in October 

 Approaching the one year mark with our little angel and things have changed so much! Getting out and about is so much easier than it used to be. It’s simply amazing how much happens in a short period of time when you become parents. Simple things like a pumpkin patch with a petting zoo become a world of new experiences. Speaking of new experiences, I tried my first deep fried Oreo though I am certainly regretting it today. We rarely eat fried anything these days and I managed to make a weekend out of it. Starting with Logan’s Roadhouse on Friday. I was so good all week that I decided to treat myself to a fried shrimp entree. With that entree I also had a nice buttery roll and full fat ranch dressing salad with croutons and all! I entered it all on my fitness pal and WOW, even though I was way under calories for the day before my meal, I still managed to go over about 300 calories after tallying up my drinks. My body is less than appreciative today. Seems the older I get the less I bounce back from unhealthy choices. This is a new week and I can’t mope around about the past. It’s time to get back to it and work towards my next goal weight.
